Potato Kheer Recipe : Potato Pudding Recipe

Ingredients :
Potatoes. 3-4 Big
Almond meal, Powder / Ground Almonds. /4 Cup
1 tsp Cardamom powder. 1 Tsp
Jaggery powder. 3-4. Tbsp /4 Cup
1/2 tsp Saffron soaked in 2 tbsp warm milk
2 tbsp flakes coconut For topping
Almonds For garnish. 2 Tbsp
Method :
* Heat coconut milk in a heavy bottom pan. Cook till it reduces by a quarter.
* Add the cardamom powder, almond meal, and potato puree. Cook till thick and creamy, stirring occasionally.
* Take the kheer off the heat. Stir in the jaggery powder and saffron. Taste and adjust for sweetness.
* Top with melon seeds, coconut flakes, rose petals, pistachio, and almond slivers.
* Serve warm or chilled. Enjoy!
