Egg Plant Potato  Curry

INGREDIENTS
*  oil                                          3Tbsp
*  cumin seeds.                     1 Tbsp
*  Ginger  garlic Paste.       1,1 Tbsp
* coriander powder              1 Tbsp
* Turmeric Powder                1/4 Tsp
* 1potato, cubed small         4-5
* Egg Plant Begain                  4-5
* eggplant Chopped                 4
*  Tomatoes   Chopped         3-4
*  salt                                             1 Tsp
*  All Spice Powder                     1 Tbsp
* cilantro for garnish                  5-8
* Green Chillies for  garnish                    
* Method :
NSTRUCTIONS
1. Heat oil in a pan over medium heat. When hot, add  onions   cook  until change color and get fragrant. A few seconds or a minute depending on how hot the pan  heat the pan add oil Then add,
2.  Add garlic ginger  paste  and cook for a minute or until the garlic is golden.
3. Add the coriander powder and turmeric, crush red flakes, red pepper powder, cumin seeds  and mix in. Add potatoes and yogurt mix in.
4. Add the tomatoes, salt and water Potaoes and mix in. Cover and cook for 15 minutes. Stir, reduce heat to medium-low and continue to cook until the potatoes  add egg plant, Stir, reduce heat to medium-low and continue to cook until the potatoes , egg plant  cook  are tender to preference. about 15 minutes. Taste and adjust salt and spice and mix in.
5. Garnish with a good sprinkle of  garam masala, all spice powder or both, and cilantro , chillies and serve.
