Parmesan and Basil Shortbread Cookies 2020

Flour. 110 g/2/3 cup
Plain flour for dusting
Parmesan cheese. 55 g/2 oz / 1/2 cup
Melted butter. 55 g/2oz/half stick
Egg yolk. 1
Dried basil 1 tsp
Salt. Half tsp
Basil leaves. 10 g, 4 tbsp
Method
Prepare and measure all of the ingredients . Wash the basil leaves and grate the Parmesan cheese.
2:Combine the flour, butter, Parmesan cheese, dried basil and salt in a food processor.
3:: pulse until the mixture resembles fine breadcrumbs.
4::Add the egg yolk and pulse again until the mixture comes together to form a dough; add a little warm water if the dough is too dry.
5:: turn the mixture out onto a work surface and form into a ball . Wrap in cling film and chill for 15
minutes. Preheat the oven to 180 C/350F/gas 4
Grease and line the baking trays with butter paper.
Remove the dough from fridge and roll out on a lightly floured work surface to 1 cm thickness .
7 :: Use a 3-4 cm cutter to punch out rounds of the dough. Place carefully onto the trays and decorate each with a basil leaves . Bake for 10- 12 minutes.
Remove from the oven and let them cool before
serving.
