MUTTON YAKHNI PULAO

ingredients
Ginger.................................... 1 large piece
Black Pepper CORN ........... 5 to 8
Black Cardimon................... .2 nos
Cinnamon sticks................... 2 to 3
Cloves.................................. 5
Ingredients For POLAO :
RICE.............................................. 4 Payali 4 Pao
ONION.......................................... 2 large
GINGER GARLIC PASTE............. 2,2 TBSP
ALL SPICE PWDER..................... 2 TBSP
GREEN CARDAMON......................5
CLOVES..........................................4
BLACK CARDAMON......................2
YAKHNI ........................................ 4 CUPS
OIL.................................................. Half Cup
METHOD :
IN a non stick or steel pan or pot add mutton with bones and add 7 t0 8 glass water i am full pan with
water and add garlic cloves ,ginger, whole spice cloves, black & green cardamon, black pepper corn,
etc, and simmer for 2 to 4 hours till mutton tender. than flame off and leave mutton in a yakhni and set aside.
Heated oil and fry onion till golden brown color than add ginger garlic paste and saute for 2 minutes. Add 5 green cardamons cloves and mutton and saute in oil , than add rest of the mutton stock or yakhni and simmer for 5 minutes.Add rice and all spice powder and cook for till done
At the end make rice heat ( dum lagana ) to cook for 2 minutes for high flame than 10 minutes for very low zeroflame. till done than flame off and serve . Serve with dahi Raita and green Chatni
