COUSCOUS SALAD

Ingredients :
Bottle gourd giyya 1
Carrot 2...
French beans 8
Peas 1 cup
Chickpeas 1 tin
Sweet corn 1 tin
Cucumber 1
Mint, cilantro, parshley few leaves half cup
Couscous 2 Cups
Vegetables stock 2 cups
For dressing
Olive oil 4 tbsp
Lemons 2 lemons
Lemon zest 2 tbsp
Method : Steam or boil the vegetables until tender. Set aside.
Put the couscous in a large bowl and add the hot stock yakhni . Cover with foil 3-4 minutes. Remove the foil and mix in the butter using a fork. Mix through the vegetables and cilantro parshley .
Place the remaining ingredients in a screw top jar with some salt and black pepper. Shake well then pour over the salad. Toss the salad well and serve
